Avacado with Bell Peppers and Tomatoes Salad Recipe

Here’s a healthy salad you can make for lunch, it’s especially fresh for summer days with lots of fresh flavor.

 

Directions

1. In a small bowl, whisk together oil, lime juice, garlic, and cayenne. Season with salt.

2. Scoop out meat from avocado halves and chop. Transfer to a bowl and add the pepper, tomatoes, scallion, and cilantro.

3. Drizzle with dressing and season with salt. Gently stir to combine.

Serve in a bowl, or spoon into the empty avocado shells to make a pretty display. Garnish with extra cilantro leaves.
